Display Refrigeration Is a Merchandising Decision With a Mechanical Bill

A glass door cooler is bought for one reason: product sells better when customers can see it. Everything else about the specification — the glazing, the lighting, the shelving, where the condenser sits — exists to keep that view clear and the product cold while the door is worked all day.

That is why placement matters as much as the cabinet. A merchandiser that performs perfectly in a cool back aisle will fog, cycle and struggle if it is pushed into a sunlit vestibule beside an entrance in August. Ambient conditions are part of the specification, not an afterthought.

Self-Contained Cabinets or a Remote Door Bank

The first real decision on any display refrigeration project is where the heat goes. A self-contained cabinet rejects its heat into the store. A remote system sends it outside and leaves only the case on the sales floor.

For one to three doors, self-contained almost always wins on cost and simplicity. Once a store is running a long door run, the arithmetic changes — the compressor heat becomes an air conditioning load, and every cabinet is another piece of equipment to maintain.

Choosing and Installing Glass Door Coolers

What glass door coolers do that solid doors cannot

A glass door cooler earns its place by selling. Product sits at eye level behind a sealed, insulated door, lit from inside, visible from the aisle, and cold enough that a customer can take it straight to the counter. That is a fundamentally different job from a back-of-house cold room, and it is specified differently.

Where a store needs display and bulk storage from the same footprint, the answer is usually a glass door walk-in cooler instead, and where the product is beer at volume, a beer cave is often the better return on the same wall.

Self-contained cabinets or a remote door bank

Self-contained merchandisers carry their own condensing unit, either bottom-mounted or top-mounted, and need only a suitable circuit and somewhere for condensate to go. They are quick to place, easy to relocate, and the obvious choice for one to three doors in a convenience store, café or independent retailer.

They also put their compressor heat and noise into the room. Once a store is running a long line of doors, that heat becomes a load on the building's own air conditioning, and the maintenance count multiplies. At that point a remote arrangement — door bank cases fed by a central condensing rack, with the heat rejected outside — is usually the better system. That is the standard approach in supermarket and larger grocery layouts.

Bottom-mount and top-mount are not just a service preference either. Bottom-mount units keep the condenser near cooler floor-level air and put the working shelves at a comfortable height; top-mount units draw from warmer ceiling-level air but keep the machinery away from floor dirt and washdown. Which one suits depends on the room, not on the catalogue.

Glass, coatings and the sweating problem

The most common complaint about display refrigeration is condensation on the glass — because a fogged door hides the product, which defeats the entire purpose. Modern doors deal with it in two ways. Sealed multi-pane glass with a low-emissivity coating and an inert gas fill keeps the outer pane close enough to room temperature that moisture does not condense on it under normal conditions. Where conditions are harder, anti-condensate heating in the glass and frame is used, ideally under a controller that modulates it against the actual humidity in the store rather than running flat out all day.

The room matters as much as the door. A cooler placed in a sunlit vestibule, beside a busy entrance in August, or opposite a cooking line will see conditions no door was rated for. Every merchandiser has an ambient rating, and placing one outside its rating is the single most common reason a cooler that works perfectly in one store fogs and struggles in another.

Doors, lighting and shelving

Swing doors are the default: better sealing, simpler hardware, and a self-closing hinge with enough torque to pull the door shut every time. They need aisle clearance to open, which is exactly what a narrow store does not have — hence sliding doors, which take no aisle space but seal against a track rather than a full gasket perimeter and are better suited to shorter runs and lower-turn product.

Lighting sits in the mullions or the canopy and should light the product rather than the shopper's eyes. Shelving is adjustable and should be planned with the planogram, not after it: gravity-fed roller shelves keep beverage and dairy faced without staff intervention, flat shelving suits deli and prepared items, and pricing strips need to be part of the shelf spec rather than taped on later. Header graphics and canopies turn a door bank into a category statement, which is the point of paying for glass in the first place.

Installation, service access and the long term

Cabinets need levelling to seal and drain correctly, dedicated circuits sized to the equipment, and enough clearance at the condenser for airflow and for the cleaning that keeps it running.

That last point decides how a display cooler ages. A condenser coil packed with dust in a busy store runs hot, works harder and eventually stops holding temperature on the warmest day of the year. Building cleaning access into the placement — rather than pushing the cabinet tight into a nook — is free at installation and expensive to add later. Glass Door Cooler Questions From Store Operators

The practical questions that come up when a retailer is planning a door run.

Swing doors seal better, use simpler hardware and self-close reliably, which makes them the default for most runs. They need aisle clearance to open fully, so the aisle width decides whether they are practical.

Sliding doors take no aisle space at all, which is why they suit narrow convenience layouts and end caps. The trade-off is a track seal rather than a full gasket perimeter, so they suit shorter runs and product that is not being reached for constantly.

Fogging is warm humid store air condensing on a cold outer pane. It is prevented by sealed multi-pane glazing with a low-emissivity coating and gas fill, which keeps the outer surface close enough to room temperature, and by anti-condensate heating in the glass and frame where conditions are harder.

It is also prevented by placement. A cabinet in a humid vestibule or in direct sun is being asked to work outside its ambient rating, and no glazing package fully compensates for that.

Roughly when the heat and the maintenance start to matter more than the install cost. A handful of doors is cheaper and simpler self-contained. A long run puts real compressor heat into the sales floor, which your air conditioning then has to remove, and gives you a separate machine to maintain per cabinet.

A remote arrangement centralises that into one plant with the heat rejected outside. We work the comparison for your specific run rather than applying a rule of thumb.

Bottom-mount units draw cooler air from floor level and put the working shelves at a comfortable height, which suits most retail settings. They do sit in the path of floor dirt, dust and mopping, so cleaning access matters.

Top-mount units keep the machinery away from all of that but draw warmer air from higher in the room. In a store with a hot ceiling zone, that is a real penalty. The right answer depends on the room.

Enough for the door to open fully without blocking the aisle or hitting fixtures opposite, plus room for a customer to stand in front of the open door and for a shopping cart to pass behind them.

That last part is what gets missed. A door run that technically opens but stops traffic dead every time somebody uses it will underperform. Where the aisle cannot give that space, sliding doors are the fix.

They hold better than open display cases, but a long restock with doors held open is still a real load. The cabinet has to recover afterwards, and product near the front recovers last.

This is where shelving choice pays off. Gravity-fed roller shelving lets staff load from the back of the shelf and keeps the front faced, cutting how long doors stay open. In high-turn categories that is worth more than any glazing upgrade.

Condenser coil cleaning is the one that matters most. In a busy store the coil packs with dust and lint, the system runs hot and the cabinet eventually stops holding temperature on the hottest day of the year — which is the day you need it.

Beyond that: check door gaskets and hinge closing torque, keep the drain clear, and keep the airflow path around the cabinet unobstructed. Building cleaning access into the original placement makes all of that far more likely to happen.
