In practice that often points toward a remote system with the condensing unit positioned away from the residential envelope, resilient mounting, and a package chosen for quieter running rather than the cheapest option that meets the duty. Roof access in these buildings is usually controlled by the owner, so that gets established early.
It can, but the duty is different from what most people size for. A market day means a large volume pulled down and loaded out in a short period, which is a heavier demand than holding steady stock and it usually drives the refrigeration selection.
Where the two patterns conflict, the practical answer is often a main holding room plus separate staging capacity near the loading point, so a market load can be assembled without warming the whole room.
The room construction is similar; the loading and the traffic are not. Beverage storage tends to mean heavy, stacked, wheeled loads through the door repeatedly, which drives floor specification, door type, bumpers and guarding harder than a static food room does.
Whether a room needs to be shoppable or purely back-of-house also matters. If product is being sold cold from the room itself, that is closer to a beer cave brief than a storage brief, and it is worth deciding which one you are building before the panels are ordered.
