London does not behave like a scaled-down Toronto. Its refrigeration demand comes from three sources that barely share a customer type. The first is manufacturing: London has one of the larger food processing bases in the province, concentrated in the industrial lands along Highbury Avenue, out toward the Veterans Memorial Parkway and through Wilton Grove. Those plants buy cold storage as production infrastructure — rooms tied to a process step, built to survive washdown, running on shift patterns rather than trading hours.

The second is the student and institutional population. The large university campus in the northwest and Fanshawe College on the east side between them run residences, dining halls, food courts and teaching kitchens that empty and refill on an academic calendar. Add hospital and long-term care production kitchens and you have a substantial block of institutional food service whose replacement work can only happen in scheduled shutdown windows.

The third is retail and food service, and London's version of it is distinctive. Panel shells frequently outlast refrigeration by a long way, so a first phase replacing plant on the highest-risk rooms often buys enough time to sequence the rest across more than one capital cycle. Campus, college and institutional kitchens

Between the university campus in the northwest, the college on the east side, and the hospital and care-home production kitchens across the city, London has a large block of food service that runs to an academic or clinical calendar. The counties around London run a compressed season. Post-harvest cooling demand arrives over a few weeks and then largely disappears, which makes the sizing question genuinely difficult: build for the peak and carry idle capacity, or build modestly and lose throughput in the busiest fortnight of the year. Refrigeration Questions From London Businesses

The ones that come up once a southwestern Ontario project is real rather than hypothetical.

By building the project around a window the plant already has — a planned maintenance break, a changeover weekend or a scheduled shutdown — rather than trying to find one that does not exist.

Where several rooms are involved, the changeover is usually sequenced so one room is dealt with at a time and product is moved rather than lost. That sequence is agreed in writing before the project is booked, and the isolation, hoarding and cleaning requirements around a live food plant are planned with it.

That is the first thing to establish, and it is worth doing before choosing any equipment. Stall services are usually shared and modest, which rules some formats out immediately and makes self-contained cabinets more attractive than remote systems.

Where the supply is tight, the practical route is display sized to what the stall can carry, with holding capacity somewhere the building can support it. We would rather tell you a piece of equipment will not work than sell it and let you discover that at the breaker.

Yes, and along this corridor it is usually the better way to run the work. Surveys can be batched onto one trip, equipment can travel on a consolidated load where the timing lines up, and installation can be sequenced site by site.

The practical requirement is that the sites share a build standard, so the same panel, door and controller specification applies unless a building genuinely forces an exception. That is exactly how multi-site programmes are planned.

Survey, design sign-off, fabrication and delivery scheduling all have to be complete before the window starts, which means the conversation begins a term earlier than most people expect.

It is also worth surveying while the kitchen is still in service. Watching how the space actually works during term tells us more about sizing and door placement than an empty room in June ever will.

Often yes, but not always at the size people first ask for. The real questions are how much product has to be pulled down at once, how long it dwells before it moves, and whether losing throughput in the peak fortnight costs more than the idle months do.

Modular panel construction gives you a middle path: build to a sensible size now and extend the room before a bigger season rather than replacing it. What happens in the off-season — shut down, run at a holding condition, or repurpose — is worth deciding at design stage.

It narrows the options rather than closing them. Plenty of self-contained and smaller remote packages run happily on single-phase, and for a modest cold room or a display line that is frequently all that is needed.

Larger rooms, low-temperature freezers and multi-case display lines usually want three-phase, and at that point the question becomes what a service upgrade would cost against what the operation genuinely needs. We will price both routes rather than assuming the upgrade.

London gets heavy, fast accumulation off the lake, and the usual failure is not dramatic — it is a unit that becomes awkward to reach, so coil cleaning quietly stops happening between November and April.

The design answers are stand height above realistic accumulation, clearance on the service side, a position out of a drift line, and a condensate route that will not freeze and back up. All decided at siting, none of it fixable afterwards without moving the unit.

It is the best time. Refrigeration influences drain positions, panel capacity, service routes, ceiling clearances and where an exterior unit can sit, and all of those are cheap to get right on a drawing and expensive to correct in a finished shell.
