Size it in pans, not in square feet
Ask a chef how big the walk-in should be and you will get an answer in hotel pans, sheet trays and speed racks — which is the right unit. Ask a supplier and you often get square feet, which tells you nothing about whether a full mise en place fits after Thursday's delivery.

A kitchen is a hostile place for refrigeration

Freezer capacity should match your ordering, not your leftovers
Most restaurants underbuy freezer capacity and then order to fit the freezer. That is backwards, and it usually costs more in delivery frequency and lost purchasing flexibility than the room would have cost. A walk-in freezer sized to your real delivery cycle lets you buy protein when the price is right and hold stock and prepared bases properly.
Freezers in restaurant settings also take a lot of door traffic from cooks pulling single items, so door hardware and defrost strategy matter. A freezer is a different build from a cooler — floor construction, insulation and door heaters included — not a cooler turned down.
