In most businesses refrigeration preserves what has already been made. In a bakery it participates in the making. A retarding room is doing fermentation work overnight. Butter temperature decides whether a lamination holds. Cream, custard and mousse hold or split depending on how stable the room is. Get the refrigeration wrong and the product is wrong, not just shorter-lived.
The second difference is that a bakery measures space in racks. Sheet pans on a speed rack, in bakery-standard widths, wheeled in fully loaded. A room sized in square feet without checking how many racks fit through the door and turn inside it will be the wrong room on the first busy morning.

Evening mix and shape
Dough is mixed, shaped and racked. The retarding room has to take the full night's racks at once, without the last one warming the first.
Overnight retard
Slow fermentation runs in a room that holds steady for hours, with airflow that does not dry the surface of uncovered dough.
Early pull and bake
Racks come out in sequence for proofing and baking. Door traffic is heavy in a short window, so the room has to recover between pulls.

Specifying Refrigeration for a Bakery or Café
Retarding is a process step, not storage
A retarding room is doing work. It slows fermentation so shaped dough can sit overnight and be baked to a schedule that suits your staff rather than the yeast. That means the room has to hold its setting steadily for many hours, take a full night's racks in one loading without the last rack warming the first, and move air gently enough that uncovered dough does not skin.
Those are different demands from a general walk-in cooler holding boxed stock. Coil position, air throw, capacity headroom and control behaviour all get set for the retarding duty. If your room currently gives you uneven proof between the front and back racks, that is almost always airflow and loading rather than a failing system.
Size the room in racks, then check the door
Bakeries think in speed racks and sheet pans, so that is how we size. How many loaded racks go in on the biggest night, how much aisle is needed to move one past another, and — the detail most often missed — whether a fully loaded rack fits through the door and can be turned once it is inside.
Threshold height matters too. A lip that a loaded rack has to be lifted over is a daily nuisance and a spilled tray waiting to happen. Where the building will not give you a clean run, custom-built cooler units can be panelled to make the geometry work. Where the space is straightforward, ready-made cooler units in standard footprints are quicker and cheaper.
Dairy, cream and finished goods
Cream, custards, mousses and cheesecakes are the least forgiving things in the building. They want stability rather than aggressive cold, they pick up odour readily, and decorated product dries or cracks if it sits in moving air. Butter is its own case — it has to be held so it is workable for lamination without going soft in a warm production room.
In practice that means either zoning within a well-planned room or, in busier operations, a second cold space so finished and decorated product is not sharing a door with ingredient stock and savoury prep. Frozen dough and par-baked stock
Freezer capacity is what lets a bakery bake to demand rather than to a delivery schedule. Frozen dough, par-baked product and components held properly mean the second bake happens because the counter is emptying, not because a truck arrived. A walk-in freezer built for that duty handles the door traffic of staff pulling single trays through the morning without frosting the room.
It also gives you somewhere to put product when a display case comes down for service, and it protects margin when an ingredient is worth buying ahead. Most bakeries we quote have too little freezer, and have quietly adjusted their production plan around it.
The café side and the display case
Front of house is a merchandising job with a refrigeration problem underneath it. Pastry has to look right under lights, glass must not fog, cream fillings have to be held properly, and cold drinks have to be genuinely cold in a room warmed by an espresso machine and a door that opens all morning. Bakery and Café Refrigeration Questions
What bakers, pastry chefs and café owners ask before a refrigeration project.
Sometimes, if it is sized with headroom and the airflow is planned so racks are not sitting in a direct stream of air. Many bakeries do exactly that successfully.
The problems appear when the room is also holding ingredient stock and being opened constantly, or when a full night's racks go in at once and the room cannot recover. We size the retarding duty specifically rather than assuming a general cold room will cover it.
Almost always airflow and loading. If the coil is throwing air straight down the first rack position, that dough is drying and cooling faster than the racks behind it.
Coil position, rack spacing and how the room is loaded can usually be corrected. A site assessment will tell you whether it is a layout fix or a capacity issue.
Count loaded speed racks on your biggest night, then add the aisle you need to move one past another. That gives a realistic footprint far faster than a square-foot estimate.

In a small operation they often have to, and it is workable with proper zoning and covered product. Decorated items are vulnerable to drying and to odour transfer from savoury ingredients.
As volume grows, a separate hold for finished and decorated product is usually the first expansion worth making, because it also cuts door traffic on the main room.

If your afternoon bake is limited by what arrived that week rather than by what is selling, the freezer is undersized. We size it from your production plan, not from leftover floor space.
Fogging is usually about humidity, air movement and the difference between the case and the room around it — especially in a café with an espresso machine and a door opening constantly.
It can often be improved through case selection, positioning and airflow. We will look at the room as well as the case, because the room is frequently the cause.
Bakery installations are usually scheduled in the window between the last bake of one day and the first mix of the next, or across a closed day.
For replacements we agree where dough and finished product go during the changeover, and the new room is proven at temperature before anything is loaded back in.
If you laminate in volume, dedicated holding for butter and blocks makes a visible difference, because a warm production room softens them faster than a sheeting session allows for.
