Beer retail gives you two ways to sell cold product, and the right answer depends on floor area and volume rather than preference. A glass-door bank keeps customers on the sales floor and staff behind it, which suits narrow stores and smaller ranges. A walk-in beer cave puts the customer inside the cold space, which sells more volume per square foot, holds far more stock behind the facings and turns restocking into a back-aisle job instead of a sales-floor one.

Where the footprint allows it, the cave usually wins on economics. It carries deeper stock, so a long weekend does not empty the wall by Saturday afternoon, and it lets a customer buying for a party pull four cases without a staff member fetching anything. Restocking without crossing the sales floor

The layout decision that saves the most labour in a beer store is where the room gets loaded from. Rear-loaded shelving lets staff fill from a back aisle while customers shop the front, which means a delivery can be put away on a Friday afternoon without a pallet jack going through the store.

Front-loaded shelving costs you twice: once when the aisle is blocked during restock, and again when it happens at exactly the time you are busiest, because the shelf empties fastest when the store is fullest.
