A Meat Room Is Not a Cold Room With Meat In It
Butcher shop refrigeration has to do four different jobs, and most shops try to do them in one room. Carcasses and primals need to hang or sit with air moving around them. Cutting needs a working space that stays cool while people and machines are in it. Ageing needs stable conditions and airflow that are actively controlled. Separation Is a Layout Problem Before It Is a Procedure
Every butcher knows raw and packaged product should not mix. Keeping them apart under pressure on a Saturday is a different matter, and it is mostly decided by where the doors are.

Carcass and primal holding takes vertical space
The first thing that separates a meat room from a general walk-in cooler is that a lot of the product is in the air rather than on a shelf. Hanging sides and quarters need headroom, rail runs need structural support, and hooks need spacing so air can move between pieces. A room sized on floor area alone will not hold what you expect it to hold.
Air movement matters as much as temperature here. Product packed tight or pushed against a coil dries unevenly on one face and stays warm on the other. We plan coil position and air throw against the rail layout, and leave the clearance that lets a full room still perform on the day the biggest delivery lands.
The cutting room is a different problem
Most shops treat the cutting area as a normal work room and wonder why product surface temperature climbs through the morning. A cutting room contains people, saws, grinders and lights, all of which add heat, and the product on the bench is exposed for the whole time it is being worked.
Conditioning that space is a deliberate specification: cooling sized for the equipment and body heat in the room, air distribution that does not blow directly across open product, and a layout that keeps the bench close to the holding room so pieces are not sitting out waiting. Where a shop is doing volume, splitting the cutting space from the holding room is usually the change that improves everything else. Ageing needs control, not just cold
Dry ageing is the most demanding room in the shop because three variables have to hold together — temperature, humidity and steady air movement across the product surface. Any one of them drifting changes the result, and a general-purpose cold room does not control humidity or airflow to that standard.
An ageing chamber is therefore built as its own space, sized to the number of pieces you intend to run and configured so air passes evenly rather than hitting the front rack and stopping. Shops running wet-aged vacuum-packed product alongside dry ageing need holding capacity for both, kept separate from the working room so the chamber door is not being opened during cutting. Building for the end-of-day washdown
Every meat room gets hosed. That is what breaks rooms that were not built for it: water tracks into unsealed panel joints, sits at the wall-to-floor junction, and corrodes hardware that was specified for a dry backroom.

Holding and freezing are two different rooms
Fresh holding and frozen storage get confused constantly, and the cost shows up as product quality. Fresh protein wants short, stable, well-ventilated holding. Frozen storage wants a true walk-in freezer — different floor construction, insulation, door heaters and defrost strategy — sized for trim, bone, portioned stock and anything you buy ahead.
Between them sits rapid chilling. Freshly cut and freshly ground product carries heat, and putting it straight into a full holding room makes the whole room work harder. Building in the capacity headroom or a dedicated pull-down space avoids that.
