What a beer cave actually is
A beer cave is a walk-in cold room dedicated to packaged beer, run colder than a standard storage cooler, and built so customers can either walk into it or shop it through a glazed frontage. It is part refrigeration project and part store fit-out, and the two halves have to be designed together or the result disappoints on both counts.

Colder than a cooler, and why that is not trivial
The whole appeal of a beer cave is that the product is properly cold when the customer picks it up, not merely refrigerated. That means running at the cold end of the above-freezing range — noticeably colder than a produce or dairy room like a standard walk-in cooler, but deliberately short of the point where product starts to freeze.
Operating in that narrow band is the engineering problem. Air coming off the coil is colder than the room average, so product sitting directly in the discharge path can freeze while the rest of the room reads correctly on the controller. That is why evaporator position, air throw and the gap between the coil and the top of the racking are planned rather than improvised. It is also why a cave benefits from a controller with a readable display and alarm capability — small drifts matter far more here than in a general storage room.
Designing for a Friday evening
A storage cooler might see its door open a few dozen times a day. A beer cave in a busy store gets opened constantly through the evening peak, and each opening pulls warm, humid store air into a room that is already running cold. Design for the average and the room will run warm exactly when it matters most.
The defences are practical. Capacity headroom in the refrigeration package. A customer door with a reliable self-closer and hardware that survives thousands of cycles.
