A beer cave is a merchandising decision before it is a refrigeration one
A beer cave is a walk-in cooler your customers walk into, and that single difference changes almost everything about how it is planned. It sits on the sales floor rather than behind it, it is shopped rather than restocked from, it has to be secured when alcohol cannot be sold, and it takes floor space from categories that were paying their way.
Done well, it turns cold beverage into a destination category and takes restocking off the sales floor entirely. Done without planning, it eats frontage, creates a wet floor at the entrance, and puts staff behind a wall they cannot see over.
This guide covers what Canadian retailers should work through before committing to a beer cave: floor plan impact, glass frontage, restocking flow, security and after-hours closure, condensation and slip risk, sprinkler and landlord considerations, sightlines and seasonal peaks.
Floor plan impact
Start with what the beer cave displaces. A walk-in room on the sales floor removes both the floor area it occupies and the frontage of the wall it sits against. In a convenience store or a small grocery that is a significant share of your merchandising space, so the decision has to be made against what that space currently earns.
Work through these before dimensions are fixed:
- Position relative to the entrance. Placing the cave at the back draws customers through the store past other categories. Placing it near the door is faster for the customer and worse for basket size. Most retailers put it deep.
- The wall it backs onto. A cave against an exterior or back-of-house wall lets you restock from behind, which is the whole operational advantage. A cave that has to be restocked from the sales floor loses most of its value.
- Aisle width in front of the entrance. Customers pause at a cave entrance. The aisle in front of it needs to absorb that without blocking the through-route, particularly at peak.
- Interior circulation. The room needs room to shop — two people passing, one of them carrying a case. A cave that is deep and narrow feels like a corridor and slows browsing.
- Ceiling height and the plant above. If the refrigeration is going on top, the space above the ceiling panel has to exist and be reachable for service. Where it does not, a side-mount or remote configuration is used instead.
Glass frontage and the walk-in-versus-glass-door decision
Walk-in cave or glass door frontage
There are two distinct formats, and retailers often conflate them.
A walk-in beer cave is a room the customer enters. All the product is at hand, the whole room is cold, and the experience is the selling point. It suits high beverage volume and stores with floor area to give.
A glass door walk-in keeps the customer outside and puts a run of display doors along the front wall — see glass door walk-in coolers. The customer shops from the aisle, the room behind is restocked from the back, and the cold air stays inside. It uses less floor area, keeps the sales floor drier, and gives up the walk-in experience.
Many stores do best with both: a glass door run for singles and impulse purchases, and a walk-in cave for cases and volume. Layout differences are covered on our beer walk-in coolers page.
Glass decisions to settle early
Whichever format, settle these before the panel schedule is drawn:
- Door count and width, set against how many customers use it simultaneously at peak
- Anti-condensation approach on the glass — a fogged door sells nothing
- Lighting inside the doors, and whether it is on a schedule or on motion
- Whether the entrance is a swinging door, a sliding door, or an open portal with a curtain
- Frame and threshold detail at the entrance, which is where the wet floor problem starts
Restocking flow
The operational case for a beer cave rests almost entirely on this. If cases come in from the back and load onto the shelving from behind, restocking never touches the sales floor: no pallet jack in the aisle, no cardboard underfoot, no staff blocking the display during trading hours.
To get that, you need:
- A rear service door into the cave from back-of-house or from a receiving corridor.
- Through-shelving or rear-load racking so product loaded from behind rotates forward. This is what makes stock rotation automatic rather than a task someone is supposed to remember.
- A route from the receiving door to the rear service door that a loaded pallet jack or cart can actually travel, at the width and turning radius of your equipment.
- Somewhere to stage a delivery so a whole drop can be brought in and worked through, rather than carried case by case.
- Cardboard and empties handling planned as part of the same route, in the opposite direction.
If the building will not allow a rear door — the cave has to sit against a demising wall, or the back-of-house is on the wrong side — say so at the design stage. It does not rule out a cave, but it changes the shelving strategy and it changes when restocking can happen.
Security and after-hours closure
Any alcohol display on a sales floor has to be securable when the store is not permitted to sell it. In Ontario, the specifics of what is required, and of any licensing conditions on your store, are set by your licensing authority and should be confirmed with them directly before the room is designed. What follows is the physical planning that supports whatever requirement applies to you.
- Closure method. Common approaches include a lockable entrance door, a roll-down shutter or grille across the frontage, or lockable glass doors. Each has different implications for the panel frontage and the ceiling detail, so it is specified with the room rather than added afterwards.
- Shutter housing. A roll shutter needs a head box and guide channels, and those need to be integrated into the storefront design. Retrofitting one is far more disruptive.
- Speed of closure. Whatever the method, it should be operable by one staff member in under a minute at close. A closure procedure that takes ten minutes will be resented and eventually skipped.
- Camera coverage of the entrance and the interior. A walk-in room is a blind space by definition, and the entrance is the control point.
- Interior safety release. Non-negotiable on any walk-in room, and doubly important on one the public enters. It must remain operable from the inside regardless of how the room is secured from the outside.
- Emergency egress. How the room is secured must not conflict with life safety requirements for the space — coordinate this with the authority having jurisdiction as part of the design.
Condensation and slip risk
This is the issue most often underestimated, and the one with the clearest consequences. A cold room open to a warm humid sales floor produces condensation at the boundary: on the glass, on the frame, on the threshold and on the floor outside it. In an Ontario summer, with the store’s front door opening every minute, sales-floor humidity makes this a daily reality rather than an occasional one.
Design responses:
- Threshold detail. Level where possible, sealed, and detailed so water does not pool at the line where cold meets warm.
- Flooring selection inside and immediately outside the entrance, chosen for slip resistance when wet rather than for appearance alone.
- Air curtain or strip curtain at an open portal. A strip curtain is cheap and effective; an air curtain is tidier for a customer-facing entrance.
- Anti-condensation glass and heated frames where a glass frontage is used, so doors stay clear and readable.
- Do not over-cool. Running the room colder than the product needs increases condensation and energy use without improving the customer experience.
- Drainage planned in. Condensate has to have a route, and that route has to be somewhere other than the sales floor.
- Mats and signage as an operational backstop, not as the primary control.
Sprinkler, building and landlord considerations
Sprinklers and fire protection
A walk-in room built inside a sprinklered retail space introduces a ceiling below the existing sprinkler heads. How that is handled — heads within the room, relocation, or another arrangement — is determined by the requirements applying to your building and is coordinated with the authority having jurisdiction and your building’s fire protection contractor. It is not a detail to leave until installation week; it can affect the room’s height, its position and its schedule.
Lease, landlord and building
Alongside that:
- Check your lease. Most retail leases have provisions covering alterations, fixtures, penetrations of the structure, and what must be removed or restored at the end of term. A walk-in room is an alteration. Get landlord consent in writing before you order.
- Confirm what happens at end of lease. This is a genuine advantage of modular panel construction — a panel room can be dismantled and relocated rather than demolished, which changes the conversation with a landlord considerably.
- Structural loading where the room is not on grade, or where refrigeration plant is going on a roof.
- Electrical service. Confirm what capacity is available to the unit and what the landlord controls.
- Roof access and penetrations if a remote condenser is going above.
- Permits and inspections where applicable, coordinated with the authority having jurisdiction. Requirements vary by municipality and by building.
Staffing sightlines
A walk-in room is a wall. Before you place it, stand at your counter and work out what you will no longer be able to see.

Orienting the cave entrance toward the counter, or putting a vision panel in the sales-floor-facing wall, usually solves this for very little money — if it is decided before the panel schedule is drawn.
Seasonal peaks
Beverage retail is seasonal in a way that most cold storage is not, and the room has to be specified for the peak rather than the average.
- Summer and long weekends drive volume and door traffic together. The room is opening constantly, warm humid air is entering constantly, and the refrigeration is working against ambient conditions at their worst. A system sized for a quiet Tuesday will not hold on a July Saturday.
- Holiday periods drive volume without the same ambient load, so the constraint shifts to shelf capacity and restocking frequency.
- Peak stock levels should be part of the sizing audit. Count what you need going into your busiest weekend, not what sits there in February.
- Restocking cadence at peak may be several times a day, which makes the rear-load route more valuable, not less.
- Overnight recovery. A room worked hard all day needs the closed hours to pull back down. Closure and lighting schedules should support that.
Planning your beer cave
